Easy Shepherd’s Pie

Enjoy a comforting twist on the classic Shepherd’s Pie with turkey bacon.

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 2 cups mashed potatoes
  • 1 cup mixed vegetables
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 cup chicken broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the turkey bacon until crisp, then remove and chop.
  3. In the same skillet, add olive oil and sauté onion and garlic until translucent.
  4. Add ground turkey, mixed vegetables, Worcestershire sauce, thyme, and cooked turkey bacon. Cook until turkey is browned.
  5. Pour in chicken broth and simmer for 5 minutes.
  6. Spread turkey mixture in a baking dish and top with mashed potatoes.
  7. Bake in the preheated oven for 20-25 minutes until the top is golden.

Notes

  • For a vegetarian option, swap ground turkey for lentils.
  • Use leftover mashed potatoes for quicker prep.
