Easy Slow Cooker Chicken Pot Pie

A hearty and comforting chicken pot pie made easy with your slow cooker.

  • 2 cups cooked, shredded chicken
  • 1 cup chopped carrots
  • 1 cup frozen peas
  • 1 cup diced potatoes
  • 1/2 cup chopped onion
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (2.5 crusts) refrigerated pie crusts

Instructions

  1. In a slow cooker, combine the chicken, carrots, peas, potatoes, and onion.
  2. In a separate bowl, mix together the cream of chicken soup, chicken broth, thyme, garlic powder, onion powder, salt, and pepper.
  3. Pour the soup mixture over the chicken and vegetables in the slow cooker.
  4. Cover and cook on low for 6-8 hours or until the vegetables are tender.
  5. About 30 minutes before serving, prepare the pie crusts according to package instructions.
  6. Once the filling is ready, pour it into a baking dish and top with the pie crusts.
  7. Bake at 425°F for 15-20 minutes until the crust is golden brown.

  • For a more flavorful dish, add herbs like rosemary or parsley.
  • Serve with a side salad for a complete meal.
