  • 4 bell peppers
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup cooked brown rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy, then chop.
  4. Add ground turkey to the skillet and cook until browned.
  5. Stir in onion, garlic, rice, tomatoes, and seasonings.
  6. Stuff the mixture into each bell pepper and top with cheese.
  7. Place stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes, then uncover and bake for an additional 10 minutes.
