Easy Stuffed Bell Peppers

  • 4 bell peppers
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup cooked rice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 cup shredded cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook turkey bacon until crispy, then chop it into pieces.
  4. In the same skillet, add ground turkey and cook until browned.
  5. Stir in rice, garlic powder, onion powder, paprika, and bacon pieces.
  6. Stuff the bell peppers with the mixture and top with shredded cheese.
  7. Drizzle with olive oil and place in the oven.
  8. Bake for 25-30 minutes or until the peppers are tender.

Notes

  • Feel free to add more veggies to the stuffing mix.
  • Can be made ahead and stored in the fridge for up to 2 days.
