  • 4 medium bell peppers
  • 1 cup cooked rice
  • 1/2 pound turkey bacon, chopped
  • 1 cup diced chicken ham
  • 1 cup shredded cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet, cook the turkey bacon until crispy.
  4. Add onion and garlic, and cook until translucent.
  5. Mix in the cooked rice, chicken ham, Italian seasoning, salt, and pepper.
  6. Stuff the mixture into the bell peppers and top with shredded cheese.
  7. Place stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
