Elote Pasta Salad

A refreshing take on classic pasta salad featuring the flavors of elote and the crunch of turkey bacon.

Ingredients

  • 8 ounces pasta
  • 4 slices turkey bacon
  • 1 cup corn, grilled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. While pasta cooks, in a skillet, cook turkey bacon until crispy. Remove and chop.
  3. In a large bowl, combine cooled pasta, corn, tomatoes, onion, cilantro, and cotija cheese.
  4. In a separate small bowl, mix mayonnaise, lime juice, and chili powder.
  5. Toss the pasta salad with the dressing, and add in the chopped turkey bacon.
  6. Serve immediately or chill before serving.

Notes

  • For added flavor, consider grilling the corn on the cob before adding.
  • This salad can be made a day in advance for best flavors.
