- 8 ounces pasta
- 4 slices turkey bacon
- 1 cup corn, grilled
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 cup cotija cheese, crumbled
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Cook pasta according to package instructions. Drain and let cool.
- While pasta cooks, in a skillet, cook turkey bacon until crispy. Remove and chop.
- In a large bowl, combine cooled pasta, corn, tomatoes, onion, cilantro, and cotija cheese.
- In a separate small bowl, mix mayonnaise, lime juice, and chili powder.
- Toss the pasta salad with the dressing, and add in the chopped turkey bacon.
- Serve immediately or chill before serving.
