- 8 ounces rotini pasta
- 4 slices turkey bacon
- 1 cup cooked chicken ham, diced
- 1 cup butternut squash, roasted
- 1/2 cup dried cranberries
- 1/2 cup pecans, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup green onions, sliced
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
- In a large bowl, combine the cooked pasta, turkey bacon, chicken ham, roasted butternut squash, cranberries, pecans, feta cheese, and green onions.
- In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
