Fall Harvest Pasta Salad

An easy and delicious fall harvest pasta salad featuring turkey bacon and chicken ham.

Ingredients

  • 8 ounces pasta of your choice
  • 4 slices turkey bacon
  • 8 ounces chicken ham, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, chopped
  • 1/2 cup red onion, diced
  • 1/2 cup corn, cooked
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. In the same skillet, add diced chicken ham to heat through.
  4. In a large bowl, combine cooked pasta, turkey bacon, chicken ham, cherry tomatoes, bell peppers, red onion, corn, and feta cheese.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt, and pepper.
  6. Pour dressing over the salad and toss to combine.
  7. Serve immediately or refrigerate for later.
