  • 2 packs ramen noodles
  • 1 pound chicken breast, thinly sliced
  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • 1 cup mixed vegetables (carrots, bell pepper, etc.)
  • 2 eggs

Instructions

  1. In a pot, bring chicken broth to a boil.
  2. Add soy sauce and chili paste, stirring to combine.
  3. Add the chicken slices and mixed vegetables, cooking until chicken is done.
  4. Meanwhile, cook the ramen noodles according to package instructions.
  5. In a separate pan, fry the eggs until the whites are set but yolks are still runny.
  6. Drain the ramen noodles and add them to the broth mixture.
  7. Serve the ramen in bowls, topping each with a fried egg and sliced green onions.
