Flavorful Crockpot White Chicken Chili Soup

A hearty and comforting white chicken chili made effortlessly in a crockpot.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup corn, frozen or canned
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 4 cups chicken broth
  • 1 cup milk or cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onions and sauté until translucent.
  2. Add garlic and cook for an additional minute.
  3. Transfer onions and garlic to the crockpot.
  4. Add chicken breasts, white beans, diced tomatoes, corn, cumin, chili powder, paprika, and chicken broth. Stir well.
  5. Cook on low for 6-8 hours or on high for 3-4 hours.
  6. Remove chicken, shred it, and return it to the pot.
  7. Stir in milk or cream and season with salt and pepper.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • For extra heat, add jalapeños or cayenne pepper.
  • Enjoy with tortilla chips or crusty bread.
