Fresh Cucumber Caprese Salad

A refreshing and unique take on the classic Caprese salad using fresh cucumbers.

Ingredients

  • 2 large cucumbers
  • 1 pound fresh mozzarella cheese
  • 1 cup cherry tomatoes
  • 1/2 cup fresh basil leaves
  • 3 tablespoons balsamic glaze
  • 1/4 cup olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Slice the cucumbers into thick rounds.
  2. Cut the mozzarella cheese into similar thickness as cucumbers.
  3. Halve the cherry tomatoes.
  4. In a large bowl, layer the cucumbers, mozzarella, and tomatoes.
  5. Add the fresh basil leaves.
  6. Drizzle with balsamic glaze and olive oil.
  7. Season with salt and black pepper to taste.
  8. Toss gently to combine and serve immediately.

Notes
