Garlic Butter Chicken and Potato Skillet

  • 4 boneless, skinless chicken thighs
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt 2 tablespoons of butter over medium heat.
  2. Season chicken thighs with salt, pepper, and thyme, then add to the skillet.
  3. Cook chicken for 5-7 minutes on each side until browned and cooked through. Remove from skillet and set aside.
  4. Add remaining butter and halved baby potatoes to the skillet. Cook until potatoes are golden brown and fork-tender, about 15 minutes.
  5. Add minced garlic to the potatoes and cook for an additional minute.
  6. Return the chicken to the skillet, mix well, and cook everything together for another 2 minutes. Serve hot.
