Greek Orzo Pasta Salad with Grilled Shrimp

A refreshing and flavorful dish combining orzo pasta and grilled shrimp, perfect for summer meals.

  • 1 cup orzo pasta
  • 1 pound shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a grill pan, cook the shrimp until they are pink and opaque, about 3-4 minutes per side.
  3. In a large bowl, combine the cooked orzo, shrimp, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, parsley, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
