Grilled Chicken Thighs with Chimichurri

  • 4 chicken thighs
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, combine olive oil, red wine vinegar, parsley, garlic, red pepper flakes, salt, and black pepper to make chimichurri.
  3. Marinate the chicken thighs in half of the chimichurri sauce for at least 30 minutes.
  4. Grill chicken thighs for about 6-7 minutes per side, or until fully cooked.
  5. Serve chicken topped with remaining chimichurri sauce.

Notes

  • Let the chicken rest for 5 minutes before serving for juicier meat.
