Healthy Baked Chicken Parmesan

A flavorful and healthier version of classic Chicken Parmesan that is baked instead of fried.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1 cup marinara sauce
  • 1 cup shredded part-skim mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow bowl, whisk eggs.
  3. In another bowl, mix breadcrumbs, Italian seasoning, garlic powder, salt, and pepper.
  4. Dip each chicken breast in eggs, then coat in breadcrumb mixture.
  5. Place the chicken in a baking dish and cover with marinara sauce.
  6. Sprinkle mozzarella and Parmesan cheese on top.
  7. Bake for 25-30 minutes until chicken is cooked through.
