  • 1/4 cup unsweetened applesauce
  • 1 cup milk of choice
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the bananas until smooth.
  3. Add the honey (or maple syrup), applesauce, and milk; mix until well combined.
  4. In another bowl, combine oats, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  6. If desired, fold in nuts or chocolate chips.
  7. Pour the batter into the muffin tin, filling each cup about three-quarters full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.
