  • 1 cup Greek yogurt
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the pumpkin puree, Greek yogurt, eggs, honey, and vanilla extract until smooth.
  3. In another bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Fill the muffin cups about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
