Hearty and Healthy Lentil Rice Soup

A delicious and nutritious lentil rice soup featuring turkey bacon for added flavor.

Ingredients

  • 1 cup lentils
  • 1/2 cup brown rice
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, sauté onion, carrots, and celery until soft.
  3. Add garlic and cook for another minute.
  4. Stir in lentils, brown rice, vegetable broth, thyme, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30-35 minutes until lentils and rice are tender.
  6. Return the turkey bacon to the pot and mix well.
  7. Serve hot.

Notes

  • This soup is even better the next day, as flavors develop.
  • Feel free to add your favorite vegetables.
