Hearty Cheddar Garlic Herb Potato Soup Recipe

Deliciously creamy potato soup packed with flavor from cheddar cheese, garlic, and herbs, complemented by crispy turkey bacon.

Ingredients

  • 4 large russet potatoes
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the diced potatoes and chicken broth. Bring to a boil and then simmer until potatoes are tender.
  4. Stir in the heavy cream, cheddar cheese, thyme, and parsley. Blend until smooth.
  5. Season with salt and pepper. Serve topped with crumbled turkey bacon.

Notes

  • For a thicker consistency, blend more of the potatoes.
  • Can substitute ham for turkey bacon if desired.
