- 1 cup green lentils
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until vegetables are soft.
- Add garlic, cumin, and thyme. Cook for another minute to release flavors.
