High Protein White Chicken Chili

High Protein White Chicken Chili is a delicious, healthy alternative to traditional chili, packed with flavor and nutrients.

  • 1 pound boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can diced green chilies
  • 4 cups low-sodium chicken broth
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup Greek yogurt, for topping
  • 1/4 cup cilantro, chopped, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  2. Add the chicken breasts and cook until browned on both sides.
  3. Pour in chicken broth, add white beans, corn, green chilies, cumin, chili powder, and salt. Bring to a boil.
  4. Reduce heat, cover, and simmer for 20-25 minutes.
  5. Remove chicken, shred it, and return to the pot. Stir well and serve hot topped with Greek yogurt and cilantro.

Notes

  • For extra spice, add jalapeños or cayenne pepper.
  • This chili can be refrigerated for up to 4 days.
