- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 stalks celery, sliced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until translucent.
- Add the carrots and celery to the pot, and cook for another 5 minutes.
- Pour in the chicken broth, and bring to a boil.
- Add the shredded chicken and egg noodles, and stir in thyme and parsley. Cook until the noodles are tender.
- Season with salt and pepper to taste, and serve hot.
Notes
- For added flavor, you can include bay leaves during cooking.
- This soup can be customized with your favorite vegetables.
