Ingredients

  • 4 medium-sized russet potatoes
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Wash and scrub the potatoes under running water.
  2. Prick each potato several times with a fork.
  3. Add water to the Instant Pot, then place the trivet inside.
  4. Arrange the potatoes on the trivet.
  5. Seal the Instant Pot and cook on high pressure for 12 minutes.
  6. Allow a natural release for 10 minutes, then quick release any remaining pressure.
  7. Remove the potatoes, brush with olive oil, and sprinkle with salt and pepper.

Notes

  • For crispy skin, place the potatoes under the broiler for a few minutes after cooking.
  • Adjust cooking time for larger potatoes accordingly.
