Instant Pot Taco Soup

A hearty and easy-to-make Instant Pot taco soup perfect for weeknight dinners.

Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tablespoon olive oil

Instructions

  1. Set the Instant Pot to sauté mode and heat the olive oil.
  2. Add the chopped onion, bell pepper, and minced garlic. Sauté until softened.
  3. Add the ground beef and cook until browned.
  4. Stir in the taco seasoning, black beans, kidney beans, corn, diced tomatoes, and beef broth.
  5. Seal the Instant Pot and cook on high pressure for 10 minutes.
  6. Quick release the pressure and serve hot.
