  • 2 stalks celery, chopped
  • 1 zucchini, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups cooked pasta
  • 1 cup fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add carrots, celery, and zucchini; cook for 5 minutes.
  4. Stir in tomatoes, vegetable broth, oregano, and basil.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add cooked pasta and spinach; cook until spinach wilts.
