  • 1 cup spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the spinach, ricotta cheese, Parmesan cheese, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
  3. Lay the flank steak flat and spread the cheese mixture evenly on top.
  4. Roll the steak tightly and secure with kitchen twine.
  5. Heat the olive oil in a large skillet over medium-high heat. Sear the rolled flank steak on all sides until browned.
  6. Transfer the skillet to the oven and bake for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Remove from the oven and let rest for 10 minutes before slicing.
