Keto Cheeseburger Soup

A delicious and comforting Keto Cheeseburger Soup made with turkey bacon.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon mustard
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cauliflower florets

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add ground turkey, cooking until browned.
  3. Add onion and garlic, cooking until fragrant.
  4. Pour in beef broth and add cauliflower florets.
  5. Bring to a boil, then simmer until cauliflower is tender.
  6. Stir in heavy cream, cheddar cheese, mustard, paprika, salt, and pepper.
  7. Crumbled bacon on top before serving.

Notes

  • For added flavor, use smoked paprika.
  • This soup can be thickened by pureeing some of the cauliflower.
