A comforting and satisfying keto-friendly recipe for lasagna soup featuring turkey bacon and chicken ham.

  • 8 ounces turkey bacon
  • 1 pound chicken ham
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups zucchini, diced
  • 1 tablespoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the chicken ham and cook for a few minutes.
  3. Add chicken broth, diced tomatoes, zucchini, and Italian seasoning. Bring to a boil.
  4. Reduce heat and let simmer for about 20 minutes.
  5. Stir in cooked turkey bacon and mozzarella cheese until melted.
  6. Serve hot, garnished with fresh basil.

Notes

  • For a vegetarian version, substitute bacon and ham with mushrooms and add more vegetables.
  • This soup can be made ahead of time and stored in the refrigerator.
