- 8 ounces lasagna noodles
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup fresh basil, chopped
- Cook the lasagna noodles according to the package instructions; drain and set aside.
- In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and chop into pieces.
- Add onion and garlic to the pot and sauté until onions are translucent.
- Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the diced chicken ham and cooked noodles to the pot. Simmer for an additional 5 minutes.
- In serving bowls, mix ricotta cheese and mozzarella cheese, then ladle the soup on top. Garnish with fresh basil and chopped turkey bacon.
