Lasagna Soup

Lasagna Soup is a delightful twist on traditional lasagna, combining all the flavors you love in a cozy and comforting soup form.

  • 8 ounces lasagna noodles
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. Cook the lasagna noodles according to the package instructions; drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and chop into pieces.
  3. Add onion and garlic to the pot and sauté until onions are translucent.
  4. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add the diced chicken ham and cooked noodles to the pot. Simmer for an additional 5 minutes.
  6. In serving bowls, mix ricotta cheese and mozzarella cheese, then ladle the soup on top. Garnish with fresh basil and chopped turkey bacon.

Notes

  • For added flavor, use homemade chicken broth.
  • Feel free to customize the meats or add vegetables as desired.
