Leftover Chicken Pot Pie Soup

A warm and comforting soup made with leftover chicken and all the flavors of pot pie.

Ingredients

  • 2 cups leftover cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery, cooking until softened.
  3. Stir in garlic and cook for another minute.
  4. Add chicken broth, thyme, rosemary, and bring to a boil.
  5. Reduce heat and add shredded chicken and peas.
  6. Stir in heavy cream and season with salt and black pepper.
  7. Simmer for 10-15 minutes and serve warm.

Notes

  • For extra richness, you can add a splash of white wine.
