Lemon Chicken Orzo Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups spinach, chopped
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned on both sides, about 5 minutes. Remove and set aside.
  3. In the same pot, add onion, garlic, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add orzo and cooked chicken back to the pot. Simmer until orzo is tender, about 10 minutes.
  6. Stir in the spinach and lemon juice. Season with salt and pepper. Serve hot.

Notes

  • The soup can be made ahead of time and stored in the refrigerator.
  • For extra flavor, add herbs like thyme or dill.
