- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, diced
- 6 cups chicken broth
- 1 cup orzo pasta
- 2 cups spinach, chopped
- 1 lemon, juiced
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned on both sides, about 5 minutes. Remove and set aside.
- In the same pot, add onion, garlic, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
- Pour in the chicken broth and bring to a boil.
- Add orzo and cooked chicken back to the pot. Simmer until orzo is tender, about 10 minutes.
- Stir in the spinach and lemon juice. Season with salt and pepper. Serve hot.
