  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup buttermilk
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon juice and lemon zest.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Add the dry ingredients to the wet ingredients alternately with the buttermilk.
  7. Spoon the batter into the prepared cupcake liners, filling them about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let cool completely before frosting.

Notes

  • For added flavor, consider adding a lemon glaze on top of the cupcakes.
