Light Mediterranean Couscous Salad

A delicious and healthy salad that combines couscous with fresh Mediterranean vegetables and herbs.

  • 1 cup couscous
  • 1 ½ cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a medium saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  3. Add the fluffed couscous to the bowl and mix gently to combine.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  5. Pour the dressing over the salad and toss to coat evenly.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Serve chilled or at room temperature.
  • This salad can be made a day ahead to allow the flavors to meld.
