Loaded Cucumber & Avocado Sandwich

  • 2 slices whole grain bread
  • 1/2 avocado, mashed
  • 1 cucumber, thinly sliced
  • 4 slices turkey bacon, cooked
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon mayonnaise

Instructions

  1. Start by toasting the whole grain bread until golden brown.
  2. Spread the mashed avocado evenly on one side of each slice of toast.
  3. Layer the cucumber slices on top of the avocado.
  4. Add the cooked turkey bacon over the cucumber.
  5. Sprinkle with salt and pepper to taste.
