Mamaw’s Chicken and Rice Casserole is a beloved dish that brings comfort and joy to family gatherings.

  • 2 cups cooked rice
  • 2 cups shredded cooked chicken
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine cooked rice, shredded chicken, cream of chicken soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Transfer the mixture to a greased 9×13 inch baking dish and spread it evenly.
  4. Cover the dish with aluminum foil and bake for 30 minutes.
  5. Remove the foil, sprinkle cheddar cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Notes

  • Feel free to use leftover chicken or rotisserie chicken for convenience.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
