Mexican Chicken Salad Tostadas

A refreshing and delicious Mexican chicken salad served on crispy tostadas.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1/2 cup corn, canned or frozen
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 lime, juiced
  • 4 tostadas

Instructions

  1. In a large bowl, combine the shredded chicken, cherry tomatoes, black beans, corn, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, chili powder, cumin, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss to coat.
  4. Topped each tostada with the salad mixture and garnish with diced avocado.
  5. Serve immediately and enjoy!

Notes

  • For extra flavor, grill the chicken before shredding.
