A delicious twist on traditional Mexican street corn, using turkey bacon for a healthier option.

  • 4 ears fresh corn on the cob
  • 4 slices turkey bacon
  • 1/2 cup mayonnaise
  • 1/2 cup cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 fresh cilantro, chopped

Instructions

  1. Boil the corn for 5-7 minutes until tender.
  2. Cook turkey bacon in a pan until crispy, then chop.
  3. In a bowl, mix mayonnaise, lime juice, chili powder, and half of the cotija cheese.
  4. Spread the mixture over the cooked corn.
  5. Sprinkle with bacon, remaining cotija cheese, and cilantro.
  6. Serve warm.

Notes

  • For a spicier version, add more chili powder.
  • You can substitute turkey bacon with regular bacon if preferred.
