Mexican Street Corn Soup

  • 4 cups corn kernels
  • 6 strips turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, add onion and garlic, sauté until soft.
  3. Add corn kernels, chicken broth, chili powder, and cumin. Bring to a boil.
  4. Reduce heat and add heavy cream, simmer for 10 minutes.
  5. Blend the soup to desired consistency and season with salt and pepper.
  6. Serve hot, topped with chopped turkey bacon and fresh cilantro.
