Mexican Street Corn Soup

  • 4 cups corn kernels (fresh or frozen)
  • 1 cup heavy cream
  • 4 cups vegetable broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, sauté the diced onion and minced garlic until translucent.
  2. Add the corn, vegetable broth, chili powder, cumin, salt, and pepper. Bring to a boil.
  3. Reduce heat and let simmer for 15 minutes.
  4. Stir in the heavy cream and let cook for another 5 minutes.
  5. Use an immersion blender to puree the soup until smooth (optional).
  6. Garnish with chopped cilantro before serving.
