  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 pound ground turkey
  • 1 can (14.5 ounces) diced tomatoes
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
  3. Place the squash cut-side down on a baking sheet and roast for 40 minutes.
  4. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic; sauté until softened.
  5. Add ground turkey to the skillet, cooking until browned. Stir in diced tomatoes and seasonings.
  6. Once the squash is tender, shred the flesh with a fork and mix it with the turkey mixture.
  7. Transfer to a baking dish, top with mozzarella and parmesan cheese, and bake for an additional 15 minutes until the cheese is melted and bubbly.

Notes

  • For extra flavor, add red pepper flakes to the turkey mixture.
  • This dish can be made ahead and stored in the refrigerator.
