- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 pound ground turkey
- 1 can (14.5 ounces) diced tomatoes
- 2 teaspoons Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
- Place the squash cut-side down on a baking sheet and roast for 40 minutes.
- In a skillet, heat olive oil over medium heat. Add chopped onion and garlic; sauté until softened.
- Add ground turkey to the skillet, cooking until browned. Stir in diced tomatoes and seasonings.
- Once the squash is tender, shred the flesh with a fork and mix it with the turkey mixture.
- Transfer to a baking dish, top with mozzarella and parmesan cheese, and bake for an additional 15 minutes until the cheese is melted and bubbly.
Notes
- For extra flavor, add red pepper flakes to the turkey mixture.
- This dish can be made ahead and stored in the refrigerator.
