Miso Soup with Tofu & Vegetables

  • 4 cups vegetable broth
  • 1 cup cubed firm tofu
  • 2 cups mixed vegetables (e.g., spinach, carrots, and mushrooms)
  • 1/4 cup miso paste
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions chopped

Instructions

  1. In a large pot, heat the vegetable broth over medium heat.
  2. Add the cubed tofu and mixed vegetables. Cook for 5-7 minutes until the vegetables are tender.
  3. In a small bowl, mix the miso paste with a bit of the broth and stir until smooth, then add it to the pot.
  4. Stir in the soy sauce and sesame oil.
  5. Simmer for another 2-3 minutes, then remove from heat.
  6. Garnish with chopped green onions before serving.
