Moroccan Chicken & Rice

Ingredients

  • 2 pounds chicken thighs
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup peas
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken thighs and brown on both sides.
  2. Remove the chicken and sauté the onion, garlic, and red bell pepper until soft.
  3. Stir in the cumin, coriander, paprika, salt, and pepper.
  4. Add the rice and stir until coated with the spices.
  5. Pour in the chicken broth and return the chicken to the pot.
  6. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is cooked.
  7. Stir in peas and let sit for 5 minutes before serving.

Notes

  • Try adding some raisins for a touch of sweetness.
  • This dish can be served with a side of fresh salad.
