- 2 pounds chicken thighs
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1 cup long-grain rice
- 3 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup peas
- 2 tablespoons olive oil
- salt and pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the chicken thighs and brown on both sides.
- Remove the chicken and sauté the onion, garlic, and red bell pepper until soft.
- Stir in the cumin, coriander, paprika, salt, and pepper.
- Add the rice and stir until coated with the spices.
- Pour in the chicken broth and return the chicken to the pot.
- Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is cooked.
- Stir in peas and let sit for 5 minutes before serving.
