Mouthwatering One Pot Lasagna Soup

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 can crushed tomatoes
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the onion and garlic, cooking until softened.
  3. Pour in the beef broth and crushed tomatoes, then stir in Italian seasoning.
  4. Add the broken lasagna noodles and simmer until tender.
  5. Spoon in ricotta cheese and mixed until well combined.
  6. Top with mozzarella and Parmesan, cover, and let melt.
  7. Garnish with fresh basil before serving.
