1 cup graham cracker crumbs
1/2 cup unsalted butter, melted
2 cups cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
2 cups fresh blueberries
1/4 cup blueberry jam
Instructions
In a medium bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan to form a crust.
In a large mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
Spread the cheesecake filling over the crust in the springform pan.
In a small saucepan, heat the blueberry jam until it is melted, then pour it over the top of the cheesecake.
Arrange the fresh blueberries on top, then refrigerate for at least 4 hours or until set.
Remove from the springform pan, slice, and serve chilled.
