No-Bake Raspberry & White Chocolate Cheesecake

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh raspberries
  • 1/2 cup white chocolate, melted

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan.
  2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Fold the whipped cream into the cream cheese mixture.
  5. Gently fold in the melted white chocolate and fresh raspberries.
  6. Pour the cheesecake filling over the crust and smooth the top.
  7. Refrigerate for at least 4 hours or until set.
  8. Slice and serve with additional raspberries on top.
