One Pan Vegan Broccoli Mac & Cheese

A delicious, creamy, and satisfying vegan mac and cheese with broccoli cooked in one pan for an easy dinner solution.

  • 8 ounces elbow macaroni
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 2 cups vegetable broth
  • 1 cup cashew cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon nutritional yeast
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add the elbow macaroni and stir for a few minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the broccoli and simmer until the macaroni is cooked and the broccoli is tender.
  5. Stir in the cashew cream, garlic powder, onion powder, nutritional yeast, salt, and pepper.
