One Pot Broccoli Mac and Cheese

This One Pot Broccoli Mac and Cheese is the perfect easy weeknight meal.

Ingredients

  • 1 pound elbow macaroni
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add broccoli florets and sauté for 2-3 minutes.
  3. Add vegetable broth and bring to a boil.
  4. Stir in elbow macaroni, garlic powder, salt, and pepper.
  5. Reduce heat and simmer for 10-12 minutes, stirring occasionally.
  6. Remove from heat and stir in cheddar and Parmesan cheese until melted.
  7. Let cool for a few minutes before serving.
