One Pot Healthy Broccoli Mac and Cheese

A delicious and healthy twist on classic mac and cheese made in one pot with broccoli and turkey bacon!

Ingredients

  • 8 ounces elbow macaroni
  • 2 cups broccoli florets
  • 4 slices turkey bacon
  • 2 cups shredded cheddar cheese
  • 3 cups low-sodium chicken broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add elbow macaroni, broccoli, chicken broth, milk, garlic powder, onion powder, salt, and pepper to the pot.
  3. Bring to a boil, then reduce heat and simmer until pasta and broccoli are tender.
  4. Stir in shredded cheddar cheese until melted and creamy.
  5. Garnish with crumbled turkey bacon before serving.

Notes

  • Feel free to substitute other vegetables like spinach or peas.
  • For a vegetarian version, omit turkey bacon and use vegetable broth.
