One Pot Lasagna Soup

One Pot Lasagna Soup is a quick and comforting dish that captures all the delicious flavors of traditional lasagna in a bowl.

  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 9 ounces lasagna noodles broken into pieces
  • 1 tablespoon Italian seasoning
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil chopped

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the crushed tomatoes, chicken broth, and Italian seasoning.
  4. Bring to a boil, then stir in the broken lasagna noodles.
  5. Reduce heat and simmer until noodles are cooked.
  6. Stir in the ricotta cheese and half of the mozzarella until melted and creamy.
  7. Serve hot, topped with remaining mozzarella and fresh basil.

Notes
