One Pot Lasagna Soup

A delicious and comforting one pot lasagna soup made with turkey bacon and chicken ham.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup chopped chicken ham
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 5 cups chicken broth
  • 2 cups uncooked lasagna noodles, broken
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, cook the turkey, turkey bacon, and onion together over medium heat until browned.
  2. Add the garlic and cook for an additional minute.
  3. Stir in the crushed tomatoes, chicken broth, broken lasagna noodles, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for about 20 minutes, or until the noodles are tender.
  5. Stir in the ricotta and half of the mozzarella until well combined.
  6. Serve hot, topped with the remaining mozzarella cheese.

Notes

  • For a vegetarian version, omit the turkey and bacon and use vegetable broth.
