- 1 pound ground turkey
- 4 slices turkey bacon
- 1 cup chopped chicken ham
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 5 cups chicken broth
- 2 cups uncooked lasagna noodles, broken
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- In a large pot, cook the turkey, turkey bacon, and onion together over medium heat until browned.
- Add the garlic and cook for an additional minute.
- Stir in the crushed tomatoes, chicken broth, broken lasagna noodles, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 20 minutes, or until the noodles are tender.
- Stir in the ricotta and half of the mozzarella until well combined.
- Serve hot, topped with the remaining mozzarella cheese.
Notes
- For a vegetarian version, omit the turkey and bacon and use vegetable broth.
